Chia seed mango pudding, a delicious, flavorful & easy to make pudding with chia seed and mango. The whole food blogging world has already tried every possible flavor of chia seed pudding, so here, nothing new !!! I'm simply sharing my way of making chia seed mango pudding here.
Coming to Chia seed, it's believed to be super food which means it has more micro nutrients and also it's excellent source of omega 3 fatty acid and rich in antioxidant. But also European union declared chia seed as "Novel food" which means chia seed doesn't have a history of human consumption. So guess it's one of the food that got viral around some five years back only.
Chia seed looks almost similar to basil seeds/tukmaria/sabja seeds which is quite popular in India and extensively used in North Indian drinks like falooda. Both seeds are bloom when soaked in liquid and increase in its size. I'm not going into benefits of eating chia seeds, lot of online source available, if interested, google will help you. As far as me, i would like to include as much as variety in my food, so chia seed is one of the addition!!!
Now coming to chia seed pudding, it's so easy to make and can have it as breakfast or as quick snack . Chia seed takes time to bloom, so if you have soaked them and keep it in refrigerator(it stays well for 5 days), then this pudding can be made in mins. Chia Seed Mango Pudding

Ingredients
Chia Seed - 2 tbsp
Milk - 1 cup
Mango -1
Maple syrup - 1 tbsp
Vanilla essence - 1/4 tsp(optional)

Take the chia seed in a bowl and add milk, mix it well and let it sit aside for 2 hrs. You can mix this previous night and keep it refrigerator for next morning breakfast.
Next take the mango, scoop out the flesh(reserve few pieces to add into the pudding) and grind into smooth puree.
Once the chia seeds are well soaked and bloomed, add maple syrup and mix it well. Pour the chia seed milk mixture into the serving bowl.
That's it Yummy and fulfilling Chia Seed Mango Pudding is ready.

- For 1 cup of milk, you can up to 3 tbsp of chia seeds depends on how thick you like you pudding.
- Instead of regular milk, any plant based milk also works.
- Tried once with coconut milk, mango and coconut flavors really goes together well.
- If you like you can add some toasted coconut on top for extra flavor.
- Soaked chia seed can stay well in refrigerator for up to 5 days.
