Mooli Paratha, a delicious stuffed paratha made from radish & other spices. In north india, during winter, mooli/radish is the staple vegetable in their diet and have included them in various forms and this paratha is one among them.
Growing up in south india, other than adding in the sambar, i didn't know much about using radish in other dishes and it was very rare that you can see radish in my kitchen. One day when walking through the fresh produce aisle in the store, bored with the regular veggies and thought of buying some new veggies and picked up radishes which were so large in size.
Later when back home, i had no idea what to make with it other than sambar, consequence of impulse buying. Though i had knew paratha can be made with radish, didn't know how to make it, then came the google savior, made some parathas, liked it so much and it's been regular in our lunch menu since that day. That's how mooli paratha/Radish paratha entered our home :-) Other than paratha and sambar, I'm still looking for ways to use radish in my daily cooking.

Radish has some pungent smell and it offset my appetite a lot, so i have added a lot of mint & coriander leaves to balance that strong flavor. But if you like radish flavor, you don't need to add a lot of mint & coriander leaves.Next, once the stuffing is ready, make the parathas immediately, keeping the stuffing for a longer time will make the radish oozes out lot of liquid and it's really difficult to stuff and roll into parathas. Those are few things that you have to make sure of to make this delicious paratha. Now let's check out the recipe.

Procedure
Radish Paratha | Mooli Paratha

Ingredients
Whole Wheat flour - 1 cup
Oil - 1 tsp
Water - as needed
Salt - to taste
For Stuffing
Radish - 1 cup(grated)
Ginger - 1 tbsp(grated)
Turmeric - a pinch
Red chili powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Mint & coriander leaves - a handful
Salt - to taste

For Stuffing
Radish - 1 cup(grated)

Take the flour in a bowl, add salt & oil and mix it with flour well. Then add water to the flour.Mix it with your hand and gather it together as a single mass , now knead the dough well until the surface looks smooth.Cover it with lid and set aside for minimum 15 mins.
Peel the radish and grate it finely. Put it in a bowl, add salt, mix it well and let it sit covered for 20 mins.
Discard the water leave out from the radish and squeeze to remove any liquid and put it in the bowl again, add finely chopped mint & coriander leaves, turmeric, red chili & garam masala powder, mix it all well together. That's it, the stuffing is ready.
Take a lemon size ball from the dough, roll into thick disk with rolling pin and add a tbsp of stuffing, gather the edges and seal the stuffing.
Keep the sealed edge down, dust the surface with flour & roll into paratha with rolling pin.
Heat the tava, grease it with oil and place the paratha, drizzle some oil on top too and cook the paratha till the brown spots appears on both side.Remove from the tava and do the same for the remaining dough & stuffing.

Tasty Mooli/Radish Paratha is ready. Serve it with your favorite curry. We have it with veg makhani & pomegranate raita.

Notes:- The dough should be pliable and smooth.
- Make sure to drain the water from radish well.
- Adjust the spices for the stuffing as per your liking, you can add cumin powder if you like that flavor.
