Maida Burfi, an easy burfi recipe and you can make them on any festive occasion. I have tried this burfi many times and it's came out super delicious on each time expect the first few failures. Around 3 years before, when i searched for some easy diwali recipes,i came to know about this burfi.
On blogsphere, everyone says it's super easy and even beginners can try on these, so on the first attempt with lot of confidence i had tried it and the end result was like gum yeah,exactly like the gum we used to make with maida in our school days, in the second time, it was like crumble and it didnt hold the shape. When it comes to making sweets especially indian sweets,I have the habit of screw up the easy things and get succeed on difficult things in the first attempt itself :-) . Dont know what went wrong with the burfi at that time, but now i know, the sugar syrup consistency and the quantity is very important to get it right.
Now coming to today recipe, i have made them on diwali time and i couldn't able to post on that day. Few days before, hubby had noticed that today is 5th blog anniversary and informed me. Yeah, it's been five years into blogging, though i haven't post regularly on first three years,last two years have been really great,i had participate in month long marathon,explore lot of new cuisine and recently i bought my own domain, so far it's been a great journey and i have learnt a lot. So to celebrate this occasion, here is the delicious burfi recipe.

Maida Burfi

Preparation Time : 10 mins | Cooking Time : 25 minsMakes : 40 small burfis

Ingredients
Maida/All Purpose flour - 1 cup
Sugar - 2 cup
Ghee/Shortening/Dalda - 1/2 cup
Water - 1/2 cup
Saffron - few strands
Orange food color - a pinch 
Almonds(optional)

Procedure
First keep the tray ready either line it with foil paper or grease it with ghee. Roughly crushed the almonds. Heat the shortening in the non stick pan. When it all melts, add a pinch of flour to the pan, if it fries immediately,then it's ready to add the flour.Add the flour and saute it till the nice aroma comes, it may takes 10 -12 mins in medium flame. Transfer into another plate.In the same pan, add the sugar & water along with few saffron strands and let it boil.When the sugar syrup is about to reach  one string consistency, add a pinch of orange color & stir well. Once the sugar reaches one string consistency(wet your fingers, take the sugar syrup in between your thumb and forefinger,it should from a string), switch off the flame.Remove the sugar syrup from stove top to kitchen counter, add the roasted maida and mix well without any lumps.Keep on stirring, it starts to thicken, when it become thick and form a single mass ,transfer into the tray.Spread it evenly with spatula and flatten the top with hand or with small flatten bowl like i did,sprinkle the nuts on the top and press it well with bowl.Let it cool completely and cut into desired shapes.Simple and delicious burfi is ready. Store it in airtight container and it keeps well for 10 days at room temperature.
Notes:
  • Once the sugar reaches one string consistency, immediately switch off the flame and all the steps afterwards is on off flame.
  • You can use any type of nuts or keep it as plain too.
  • Saute the flour till nice aroma comes, otherwise you have raw smell of maida in the burfi.
  • You can flavor the burfi with vanilla essence or with cardamom too.
  • Dont worry if it's in running consistency when you mix maida with sugar syrup, it will becomes single mass when you stir continuously.
  • It's very important to get one string consistency of sugar syrup.
