Sweet Potato Poriyal, an easy stir fry with indian spices and it goes well with South Indian meals.
The mild sweetness from the sweet potatoes compliments the Indian spices well and it tastes so delicious.
Sweet Potatoes available here(both in US & Canada) are quite different from the ones that are  available in India.  The Indian variety is pale yellow in color in contrast to the bright orange ones available here. 



In our school days, Amma boiled the sakkaravalli kizhangu/Sweet potato for our after school snack. Yep, just boiled(with any seasoning) and have it as such. 

If the potatoes are less sweet then we had them with sugar and it's simply delicious and we absolutely loved them. But now here in the US, i dont like this too sweet variety one as it's simply boiled, so i have  tried this poriyal one day  and it's an instant hit in our home.
Now let's see how to make this delicious sweet potato poriyal.

Sweet Potato Poriyal

Sweet Potato Poriyal, Sweet Potato Stir fry, Sakkaravalli Kizhangu Poriyal Sweet Potato Poryial, an easy stir fry with indian spices and it goes well with South Indian meal.
Ingredients
Sweet Potato - 1(large)
Onion - 1/2 of medium size one
Oil - 1 tsp
Mustard & Urad dal - 1/2 tsp
Curry leaves - few
Turmeric powder - a pinch
Red chili powder - 1/2 tsp
Salt - to taste

Procedure
Cut the sweet potato into half and put it in pressure cooker along with 1/2 cup of water and pressure cook it for 1 whistle. Once the pressure released from the cooker, remove it from the hot water and let it cool, in the mean time, chop the onions into small pieces and torn the curry leaves and keep it ready.
Peel the potatoes &cut them into thin circles/cubes  and sprinkle all the spices(turmeric & red chili powder ) & salt. Heat the kadai with oil, add mustard and urad dal, let the mustard splutter.
Add the onions and saute till the onions becomes translucent, then add the sweet potatoes with spices.
Toss the pan,so the spices evenly mix with the potato and let it cook on medium flame till both sides of the potato becomes golden brown and crispy.
Tasty Sweet Potato Poriyal is ready.

Notes:
  • Don't use the spatula after added the potatoes in the pan, it will mash them, gentle toss the potatoes in regular interval.
  • As the sweet potato have more sweetness, add a little more red chili powder to balance the sweet.
  • Instead of pressure cook the sweet potato, you can cook them in open pot too.
  • Don't cook for more than 1 whistle, it will turn mushy.
