Cauliflower/Gobi Paratha, a stuffed paratha made with spicy cauliflower masala inside.After knowing the knack of rolling stuffed paratha, i make lot of parathas for our lunch & dinner. Even i make them during our one day trips. To me, stuffed parathas are the great trip food. It's very easy to pack and you dont need any gravy ,simple raita is enough.
For this paratha, grating the cauliflower is bit time consuming, other than that, it's super easy.Last week, i made this along with Aloo Matar masala  instead of plain raita,the combo is very delicious and we had a hearty lunch.Give it a try and enjoy with your family.


Cauliflower/Gobi Paratha

Ingredients
Cauliflower - 1 1/4 cup (grated)
Cumin seed - 1/2 tsp
Turmeric powder - 1/4 tsp
Red chili powder - 1/2 tsp
Coriander powder - 3/4 tsp
Garam masala - 1/2 tsp
Salt - to taste
Coriander leaves - few
Oil - 1/2 tbsp
For dough
Wheat flour - 1 cup
Oil - 1 tsp
Salt - to taste
Water
Procedure
Wash and cut the cauliflower into florets along with stem(it helps to hold the cauliflower while grating) .Grate the florets alone with grater and leave the stems.
Heat the pan with oil,add the cumin seed,let it crackle, add the grated cauliflower and spices(turmeric,chili& coriander powder ) .
Add salt and mix everything well. Add a tbsp of water in the cauliflower ,cover the pan with lid and allow to cook.
Once cauliflower is cooked , add the garam masala and coriander leaves, mix well and switch off the flame.
Allow the cauliflower masala to cool. In the mean time, prepare the dough take all the ingredients listed under "For dough" except water in a bowl , mix well and add water slowly to make pliable dough.(i used extra flour than mentioned  here for making plain chapathi in addition to this paratha).
Make medium sized balls out of stuffing once it cooled. Similarly make medium size ball out of dough.Both stuffing and dough size should be equal.Take the dough , roll into small disc and place the stuffing inside.
Seal the edges as shown below and remove the excess dough.
Dust the flour on both sides and keep the sealed edge as downside and roll into required size with rolling pin.
Heat the tava, drizzle some oil and place the rolled paratha and cook it both sides until brown spots appear on each sides.Remove it on plates and repeat the same for remaining dough.
Tasty Cauliflower/Gobi Paratha is ready.

Notes
  • Dont add too much water while cooking cauliflower.
  • It's little difficult to make balls out of stuffing, just hold it tightly with your hands till it forms the shape.
  • If the water content is more in stuffing, then it will make the outer layer soggy and you cannot roll it(personal experience :-)).
