Some how i managed to post 6 recipes under the theme "Indian States" for this week , even with all  the travelling.Though all the recipes are not fancy and doesn't require elaborate procedure & lot of time, i'm happy that i can make it without the break.So i end this series with another sweet recipe "Churma" from Rajasthan and it's usually served with Dal Baati.
Churma is coarsely ground wheat crushed and cooked with ghee and sugar and it's famous in Rajasthani Cuisine. Traditionally it is made by mashing  wheat flour baatis in ghee and jaggery. But i use sugar here to make this.It's so flavorful with ghee and i must go for another serving.

Ingredients

Whole Wheat Flour - 1 cup
Fine Sooji(Rava) - 1/4 cup
Ghee - 4 tsp
Almond - 2 tbsp(sliced)
Cardamom powder - 1/4 tsp
Powdered sugar - 4 tbsp
Ghee / Oil - For deep frying
Procedure
In a wide bowl , add wheat flour, rava & 2 tsp ghee , mix it well & add water to from stiff dough.Take small portion of dough  , roll into ball,then flatten it and make well in the center, do the same for remaining dough.
Heat the oil/ghee, fry the patties until it become golden brown. Allow it to cool.Break them into small pieces and put it blender with sugar & cardamom powder.Grind into fine powder and then add remaining ghee and mix it well. Serve it with sliced almond.Flavorful Churma is ready
Notes:
  • Traditionally only ghee is used to fry the baatis, but i dont want to that much ghee in one dish, so i used oil for frying.
  • Use jaggery instead of sugar, if you wish.
  • You can serve this as it is  or make ladoo out of this mixture.
