Ulunthu soru is one of the signature rice dishes of Tirunelveli district made from black urad dal , and I guess that outside of "Tirunelveli", only few people are aware of this rice.
Even in our place,I have heard from many people that they don't like this rice, because of the sticky nature of the dal. If you're one among them, then this recipe will help you to make the fluffy & non sticky Ulunthu Soru.
Here are the few tips that i have learnt from my mom to make fluffy & non sticky urad dal rice. First one is roast the dal before adding it into the water and the second one is sesame oil.Adding sesame oil gives non sticky rice and also it gives great flavor to this rice.
Even some people add sesame oil to this rice just before serving to enhance the flavor and taste more.So i highly recommend to add sesame oil in this rice.
Both veg and non veg side dishes taste awesome with this rice. If you prefer veg side dish, i would recommend thakkali pachadi, ellu thuvaiyal, aviyal or idi puli kulambu along with some appalam,check out this lunch menu that i had prepared with this rice and veg curries.
But my personal favorite is to have it with mutton kulambu, one of the best combination in the world to give a try. In our family, for the second serving of this rice, Appa likes to have it with curd and i do like that combination and it tastes awesome.

Procedure
Ulundhu soru| Urad Dal Rice

Ingredients
Rice - 1 cup
Rice - 1 cup
Black split urad dal - 1/4 cup
Garlic - 10 pods(small)
Cumin seed - 1/2 tsp
Fenugreek seed - 1/4 tsp
Grated Coconut - 3 tbsp
Water - 2 & 3/4 cup
Sesame seed oil - 1 tbsp
Salt - to taste
Curry leaves - few
In a kadai, dry roast the urad dal slightly(dont change the color of the dal) & also keep garlic,cumin & fenugreek seed as ready.
Soak the rice for 15 mins. In the mean time, heat 21/4 cup of water in a pressure cooker/pan and add garlic ,cumin & fenugreek seed.
Finally add the sesame oil in the rice , mix it well, close the lid and put on weight & cook it for 3 whistle.
Tasty & very healthy ulunthu soru is ready. We had it with mutton kuzhambhu & mutton sukka.

Notes:- Dal to rice ratio is 1:4 .
- Water to rice & dal ratio is 2:1, since i had used 1cup of rice & 1/4 cup of dal, i added 2 3/4 cup(2 cup for rice & 1/2 cup for dal and i have added extra 1/4 cup, since i cooked the dal in open pot for initial 10 mins) of water.
- If you want mushy rice, add extra 1/2 cup of water.
- Garlic & cumin seed gives great flavor to this rice.
- Even you can unskinned urad dal, but skinned dal gives great flavor & taste.
